Ingredients

  • 1 big block Velveeta cheese, cubed
  • 1 (8 oz) block cream cheese, softened
  • 1 can cream of chicken soup
  • 1 can Rotel tomatoes with chilies (undrained)
  • 2.25 lbs ground beef
  • 8 oz rotini pasta (or bowtie/farfalle)
  • (Optional) 1 cup reserved pasta water (to thin sauce)

Instructions

  1. Bring a large pot of salted water to a boil. Cook rotini according to package directions until al dente. Drain and reserve 1 cup of pasta water if desired.
  2. In a large skillet, brown the ground beef over medium-high heat until fully cooked. Season with salt and black pepper. Drain excess fat.
  3. Reduce heat to low and add the cubed Velveeta, softened cream cheese, cream of chicken soup, and can of Rotel tomatoes into the beef. Stir until cheeses melt into a smooth sauce.
  4. Add the cooked rotini into the cheesy beef mixture. Stir until pasta is coated. If sauce is too thick, gradually add reserved pasta water to achieve desired creaminess.
  5. Serve hot in bowls, garnished with chopped parsley if desired.

Notes

For extra flavor, consider adding chopped onions or bell peppers while cooking the beef. Use hot Rotel tomatoes for a spicy kick. Experiment with different pasta shapes if desired.
