- 1 big block Velveeta cheese, cubed
- 1 (8 oz) block cream cheese, softened
- 1 can cream of chicken soup
- 1 can Rotel tomatoes with chilies (undrained)
- 2.25 lbs ground beef
- 8 oz rotini pasta (or bowtie/farfalle)
- (Optional) 1 cup reserved pasta water (to thin sauce)
Instructions
- Bring a large pot of salted water to a boil. Cook rotini according to package directions until al dente. Drain and reserve 1 cup of pasta water if desired.
- In a large skillet, brown the ground beef over medium-high heat until fully cooked. Season with salt and black pepper. Drain excess fat.
- Reduce heat to low and add the cubed Velveeta, softened cream cheese, cream of chicken soup, and can of Rotel tomatoes into the beef. Stir until cheeses melt into a smooth sauce.
- Add the cooked rotini into the cheesy beef mixture. Stir until pasta is coated. If sauce is too thick, gradually add reserved pasta water to achieve desired creaminess.
- Serve hot in bowls, garnished with chopped parsley if desired.
Notes
For extra flavor, consider adding chopped onions or bell peppers while cooking the beef. Use hot Rotel tomatoes for a spicy kick. Experiment with different pasta shapes if desired.
