Ingredients

  • 4 spinach wraps or whole wheat tortillas
  • 1 cup hummus
  • 1 cup baby spinach or mixed greens
  • 1/2 cup shredded carrots
  • 1/2 cup cucumber, julienned or thinly sliced
  • 1/2 cup red bell pepper, sliced thin

Instructions

  1. Lay out the spinach wraps or whole wheat tortillas on a flat surface.
  2. Spread a generous layer of hummus on each wrap.
  3. Layer the baby spinach or mixed greens evenly over the hummus.
  4. Add shredded carrots, cucumber slices, and red bell pepper on top.
  5. Roll up the wraps tightly, starting from one end.
  6. Cut in half and serve immediately.

Notes

These wraps can be served with extra hummus on the side for dipping. Store leftovers in an airtight container in the refrigerator for 1-2 days.
