Ingredients

- 4 spinach wraps or whole wheat tortillas
- 1 cup hummus
- 1 cup baby spinach or mixed greens
- 1/2 cup shredded carrots
- 1/2 cup cucumber, julienned or thinly sliced
- 1/2 cup red bell pepper, sliced thin
Instructions
- Lay out the spinach wraps or whole wheat tortillas on a flat surface.
- Spread a generous layer of hummus on each wrap.
- Layer the baby spinach or mixed greens evenly over the hummus.
- Add shredded carrots, cucumber slices, and red bell pepper on top.
- Roll up the wraps tightly, starting from one end.
- Cut in half and serve immediately.
Notes
These wraps can be served with extra hummus on the side for dipping. Store leftovers in an airtight container in the refrigerator for 1-2 days.
