Description

A nutritious and flavorful quinoa casserole packed with vegetables, easy to make, and perfect for any meal.


Ingredients

  • 1 cup uncooked quinoa
  • 2 cups vegetable broth
  • 1 tbsp olive oil
  • 1 red bell pepper, diced

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Rinse the quinoa under cold water.
  3. In a medium saucepan, combine the quinoa and vegetable broth. Bring it to a boil, then reduce to a simmer, cover, and cook for about 15 minutes until the liquid is absorbed.
  4. In a skillet, heat olive oil over medium heat and sauté the diced red bell pepper until tender.
  5. Combine the cooked quinoa and sautéed vegetables in a greased casserole dish and mix well.
  6. Bake in the preheated oven for 20-25 minutes until heated through.
  7. Serve warm.

Notes
