- 3 large eggs
- 1/4 cup cherry tomatoes, halved
- 1/4 cup baby spinach, chopped
- 1/4 cup bell peppers, diced (mix of yellow and red)
- 2 tbsp red onion, finely chopped
- 1/4 cup shredded cheese (cheddar or mozzarella)
- 1 tsp olive oil or butter
- Salt & pepper to taste
- 1/2 ripe avocado, sliced
- Optional: hot sauce, fresh herbs
Instructions
- Sauté onions, bell peppers, and spinach in olive oil for 2-3 minutes until soft and fragrant. Add tomatoes and cook for another minute.
- Whisk the eggs with a pinch of salt and pepper. Pour the eggs into a greased skillet over medium heat. Let them cook undisturbed until the edges begin to set.
- Spoon the sautéed veggie mix onto one side of the omelet. Sprinkle with shredded cheese. Fold gently and cook for another 1-2 minutes until the cheese is melty.
- Fan out your avocado next to the omelet and sprinkle with cracked pepper.
- Drizzle with hot sauce or sprinkle with fresh herbs on top if desired.

Use fresh vegetables for the best flavor and feel free to experiment with different cheeses and add-ins.
