- 1/4 cup cherry tomatoes (halved)
- 1/4 cup spinach (chopped)
- 1/4 cup bell peppers (sliced)
- 1/4 cup onion (diced)
- 1 teaspoon olive oil or butter
- 1 teaspoon hot sauce (optional)
- 1/2 avocado (sliced)
- 1 slice sourdough bread (toasted)
- 1 teaspoon butter or drizzle of olive oil
Instructions
- In a bowl, whisk the eggs with milk, salt, and black pepper.
- Heat olive oil in a pan over medium heat. Add onions, bell peppers, and tomatoes. Sauté for about 3 minutes.
- Stir in the spinach and cook for another minute.
- Pour the whisked eggs over the veggies. Let cook for 2-3 minutes, then flip or fold as desired. Cook until set, then remove from heat.
- Toast the sourdough bread and spread it with butter or drizzle with olive oil.
- Slice the avocado and season with a pinch of salt and pepper.
- Plate the omelette with the toast and avocado. Drizzle the omelette with hot sauce for extra flavor if you like!
