Ingredients

  • 1/2 cup broccoli florets
  • 1/4 cup cottage cheese
  • 1/4 cup bell pepper, diced
  • 1/4 cup onion, diced
  • Salt and pepper to taste
  • 1 tablespoon olive oil or butter

Instructions

  1. In a skillet, heat the olive oil or butter over medium heat.
  2. Add the onion and bell pepper; sauté until softened, about 3-4 minutes.
  3. Add the broccoli and cook for another 2-3 minutes until tender.
  4. Meanwhile, in a bowl, beat the eggs and season with salt and pepper.
  5. Pour the eggs over the veggies in the skillet, cooking until the edges begin to set.
  6. Add the cottage cheese on top, then carefully fold the omelet in half.
  7. Cook until the eggs are fully set, then serve warm on a plate.
