Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, whisk together the eggs and milk until well combined.
- Stir in the feta cheese, spinach, and mushrooms.
- Grease a muffin tin with cooking spray or olive oil.
- Pour the egg mixture evenly into the muffin cups, filling them about 3/4 full.
- Bake for 20-25 minutes or until the frittata cups are set and lightly golden on top.
- Let cool slightly before removing from the muffin tin. Serve warm.
