Ingredients

- 1 tablespoon Olive oil
- 1/2 cup carrots, peeled and sliced
- 1 cup mushrooms, sliced
- 1 cup broccoli florets
Instructions
- Heat the olive oil in a large skillet over medium-high heat.
- Add the sliced carrots and stir-fry for about 2-3 minutes.
- Add the mushrooms and cook for another 2 minutes.
- Finally, add the broccoli florets and stir-fry for an additional 3-4 minutes, or until the vegetables are tender-crisp.
- Season with salt and pepper to taste. Serve hot.
Notes
For extra flavor, consider adding a splash of soy sauce. Make sure not to overcrowd the skillet for crisp vegetables.
