Instructions
- Sauté the diced onion, carrot, celery, and zucchini in a pot until the vegetables are soft.
- Add the quinoa and vegetable broth to the pot. Bring the mixture to a simmer.
- Cook until the quinoa is tender, about 15 minutes. Add salt, pepper, and herbs to taste.
Notes
