Delicious and easy vegetable omelette muffins packed with healthy veggies and protein, perfect for any meal.


Ingredients

  • 6 large eggs
  • 1 small onion, finely chopped
  • 1 green chili, finely chopped (optional)
  • 1 small carrot, finely chopped
  • 1/2 cup sweetcorn
  • Optional: chopped bell peppers, broccoli florets, cherry tomatoes

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin by greasing or lining it with paper liners.
  2. In a large bowl, whisk the eggs until well combined.
  3. Stir in the chopped onion, green chili, carrot, sweetcorn, and any optional vegetables you are using.
  4. Season the mixture with salt and pepper to taste.
  5. Pour the egg and vegetable mixture into the prepared muffin tin, filling each cup about 3/4 full.
  6. Bake in the preheated oven for 20-25 minutes, or until the muffins are set and lightly golden on top.
  7. Remove from the oven and let cool slightly before serving.

Notes

Feel free to mix and match your favorite vegetables. For extra flavor, sprinkle some cheese on top before baking.
