- 6 large eggs
- 1 small onion, finely chopped
- 1 green chili, finely chopped (optional)
- 1 small carrot, finely chopped
- 1/2 cup sweetcorn
- Optional: chopped bell peppers, broccoli florets, cherry tomatoes
Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin by greasing or lining it with paper liners.
- In a large bowl, whisk the eggs until well combined.
- Stir in the chopped onion, green chili, carrot, sweetcorn, and any optional vegetables you are using.
- Season the mixture with salt and pepper to taste.
- Pour the egg and vegetable mixture into the prepared muffin tin, filling each cup about 3/4 full.
- Bake in the preheated oven for 20-25 minutes, or until the muffins are set and lightly golden on top.
- Remove from the oven and let cool slightly before serving.
Notes
Feel free to mix and match your favorite vegetables. For extra flavor, sprinkle some cheese on top before baking.
