Description

Delicious thick and chewy vegan cookies filled with OREO chunks and chocolate chips, with a refreshing hint of mint.


Ingredients

  • 1 cup vegan butter, cold and cubed
  • 1 cup brown sugar
  • 1/2 cup white sugar
  • 2 tbsp ground flaxseed + 6 tbsp water (flax egg substitute)
  • 1 1/2 cups cake flour
  • 1 1/2 cups all-purpose flour
  • 1 tsp cornstarch
  • 3/4 tsp baking soda
  • 3/4 tsp salt
  • 1 1/2 cups stevia-sweetened chocolate chips
  • 1 1/2 cups vegan chocolate cookies (e.g., OREOs), chopped
  • 1 tsp peppermint extract
  • 1 tsp vanilla extract
  • Vegan gel food coloring (optional for green hue)

Instructions

  1. In a small bowl, mix 2 tbsp of ground flaxseed with 6 tbsp of water. Let it sit for 5-10 minutes to thicken and make the flax egg.
  2. Preheat your oven to 410°F (210°C).
  3. In a large bowl, cream together the cold cubed vegan butter, brown sugar, and white sugar for 2-4 minutes until fluffy.
  4. Add the flax egg, peppermint extract, and vanilla extract to the bowl. Mix on low speed for 1-2 minutes.
  5. If desired, gradually add vegan gel food coloring to achieve the desired green color.
  6. In another bowl, mix together the cake flour, all-purpose flour, cornstarch, baking soda, and salt. Gradually add this mixture to the wet ingredients and mix until just combined.
  7. Gently fold in the stevia-sweetened chocolate chips and the chopped OREOs.
  8. Divide the cookie dough into large balls and place them on a parchment-lined baking sheet.
  9. Bake for 9 minutes until the tops are golden brown and the centers are gooey.
  10. Allow the cookies to cool on the baking sheet for at least 10 minutes before enjoying.

Notes

These cookies are best served warm and can be enjoyed with almond milk or vegan ice cream. Store in an airtight container for 5-7 days or freeze for up to 3 months.
