Ingredients

  • 8 oz chow mein noodles (or any thin noodles)
  • 2 tablespoons olive oil
  • 1 cup bell peppers, sliced
  • 1 cup carrots, julienned
  • 1 cup broccoli florets
  • 1 cup snap peas (or snow peas)

Instructions

  1. Cook the chow mein noodles according to the package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add bell peppers, carrots, broccoli, and snap peas. Stir-fry for 5-7 minutes until vegetables are tender-crisp.
  4. Add the cooked noodles to the skillet and toss everything together.
  5. Season with soy sauce or your choice of seasoning. Stir well and serve immediately.

Notes

For added flavor, consider topping with sesame seeds or fresh herbs. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
