Ingredients

  • 1 1/2 cups (190 g) all-purpose flour (or gluten-free flour if needed)
  • 1/2 cup (115 g) vegan butter or margarine, chilled
  • 3 tablespoons (35 g) granulated sugar, brown sugar, or coconut sugar
  • 23 tablespoons cold water, as needed
  • 3 tablespoons (40 g) granulated sugar, brown sugar, or coconut sugar for filling
  • 2 teaspoons ground cinnamon
  • 1 tablespoon (8 g) all-purpose flour (or gluten-free flour if needed) for filling
  • 45 apples, cored and thinly sliced
  • Dash of lemon juice (optional)
  • 2 tablespoons (30 g) vegan butter or coconut oil, melted
  • 3 tablespoons (60 g) apricot jam (or any light-colored jam) for decoration

Instructions

  1. Prepare the Pastry: Grease a 9-inch (23 cm) loose-bottom tart pan. In a medium bowl or food processor, mix the flour, vegan butter, and sugar until just combined. Add cold water, one tablespoon at a time, until the dough forms. Roll the pastry into a circle about 1/4 inch (5 mm) thick. Press it into the tart pan and trim the edges. Prick the base with a fork and chill it in the fridge.
  2. Prepare the Filling: In a small bowl, mix sugar and cinnamon. Set aside half of this mixture and add 1 tablespoon of flour to the other half. Thinly slice the apples, about 1/8 inch (3 mm) thick, and brush them with lemon juice if desired.
  3. Assemble and Bake: Preheat your oven to 350°F (180°C). Bake the crust for 10-15 minutes. Once cool enough, remove the weights. Sprinkle the cinnamon sugar mixture on the base of the crust. Arrange the apple slices nicely and brush with melted vegan butter. Drizzle any remaining butter and sprinkle with the rest of the cinnamon sugar. Bake for 45-55 minutes until the apples are tender and bubbling. Brush with apricot jam for a shiny finish.
  4. Serve: Allow the tart to cool slightly before slicing. You can enjoy it warm or at room temperature with vegan ice cream, whipped cream, or dairy-free yogurt.

Notes

Use a mix of sweet and tart apples for a more complex flavor. Experiment with spices like nutmeg or cardamom for added depth.
