Ingredients

  • 12 tbsp butter
  • 1 cup sugar
  • 1 cup buttermilk
  • 1 tsp vanilla extract
  • 3 large eggs
  • 2 cups flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 8 oz cream cheese
  • 1/2 cup butter (for frosting)
  • 4 cups powdered sugar
  • 1 tsp vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, cream the butter and sugar together until light and fluffy.
  3. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, alternating with buttermilk, starting and ending with flour. Mix until just combined.
  6. Divide the batter evenly between the prepared pans and smooth the tops.
  7. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow the cakes to cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
  9. For the frosting, beat the cream cheese and butter until smooth. Gradually add the powdered sugar and vanilla extract, mixing until well combined.
  10. Once the cakes have cooled, frost the top of one cake layer, place the other layer on top, and frost the top and sides of the cake.
  11. Slice and serve.

Notes

Let the cakes cool completely before frosting to prevent melting. Decorate with sprinkles or fresh fruit for an extra fun presentation.
