- 12 tbsp butter
- 1 cup sugar
- 1 cup buttermilk
- 1 tsp vanilla extract
- 3 large eggs
- 2 cups flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 8 oz cream cheese
- 1/2 cup butter (for frosting)
- 4 cups powdered sugar
- 1 tsp vanilla extract (for frosting)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, cream the butter and sugar together until light and fluffy.
- Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
- In another bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with buttermilk, starting and ending with flour. Mix until just combined.
- Divide the batter evenly between the prepared pans and smooth the tops.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
- For the frosting, beat the cream cheese and butter until smooth. Gradually add the powdered sugar and vanilla extract, mixing until well combined.
- Once the cakes have cooled, frost the top of one cake layer, place the other layer on top, and frost the top and sides of the cake.
- Slice and serve.
Notes
Let the cakes cool completely before frosting to prevent melting. Decorate with sprinkles or fresh fruit for an extra fun presentation.
