Ingredients

Scale
  • 200 g nougat
  • 500 ml milk
  • 1 PCK pudding powder
  • 250 g butter (room temperature)
  • 10 g powdered sugar
  • 100 g dark chocolate
  • 6 eggs
  • 1 pinch of salt
  • 130 g butter
  • 180 g sugar
  • 15 g vanilla sugar
  • 100 g flour
  • 20 g baking cocoa
  • 20 g ground hazelnuts

Instructions

  1. Take butter out of the fridge to reach room temperature. Cut nougat into small pieces.
  2. Pour 450 ml of milk into a saucepan and bring to a boil.
  3. Mix 6 tablespoons of milk with the pudding powder and add to the boiling milk, stirring until it thickens.
  4. Dissolve nougat in the hot pudding and cover with cling film.
  5. Chop and melt the dark chocolate.
  6. Beat egg whites with salt until stiff.
  7. Mix butter until creamy and add half of the sugar gradually with the egg whites.
  8. Add vanilla sugar and egg yolks individually.
  9. Mix in the melted chocolate.
  10. Combine flour, baking cocoa, and ground hazelnuts, then fold in.
  11. Grease a 26 cm baking pan and flour it.
  12. Pour in the batter and smooth it out.
  13. Bake for about 20-25 minutes at 180°C (top and bottom heat).
  14. Check for doneness since ovens may vary.
  15. Whip room temperature butter with powdered sugar, then add cooled pudding to the whipped butter.
  16. Cut the cake into three equal layers.
  17. Place a baking ring around the first layer and spread cream on top.
  18. Add the second layer and spread more cream.
  19. Place the third layer on top.
  20. Refrigerate the cake for an hour.
  21. Apply remaining cream on top.
  22. Melt dark chocolate and pour it gently over the top layer.
  23. Refrigerate for two hours or overnight before serving.

Notes

Store leftover cake in the refrigerator covered with cling film or in an airtight container. It will stay fresh for about 3 to 5 days. Let it come to room temperature before serving.
