Instructions
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, beat together the softened butter and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Gently fold in the rainbow sprinkles and white chocolate chips until evenly distributed.
- Scoop tablespoon-sized portions of dough and roll them into balls.
- Roll each dough ball in additional rainbow sprinkles.
- Place the dough balls on the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
- Once cooled, sprinkle edible glitter over the cookies for a magical shimmer effect (optional).
Notes
Make sure the butter is softened to room temperature for easier mixing. Store in an airtight container for up to a week or freeze for up to three months.
