- 1/4 cup unsalted butter, melted
- 24 oz (680g) cream cheese, softened
- 1 cup granulated sugar
- 1 cup sour cream
- 1 teaspoon vanilla extract

- 1 teaspoon pink food coloring
- 1/2 cup rainbow sprinkles
- 1 cup white chocolate chips
- 1/2 cup heavy cream
- Whipped cream
- Rainbow marshmallows
- Edible glitter
- Unicorn horn candies
Instructions
- Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
- In a bowl, combine Oreo crumbs and melted butter until well mixed. Press into the bottom of the prepared pan to form the crust. Bake for 10 minutes and set aside to cool.
- In a large bowl, beat cream cheese until smooth. Add sugar, sour cream, and vanilla; mix well. Add eggs one at a time, mixing after each addition, then mix in cocoa powder and pink food coloring. Gently fold in rainbow sprinkles.
- Pour the cheesecake batter over the cooled crust and spread evenly. Bake for 60-70 minutes or until the center is set. Turn off the oven and let the cheesecake cool inside with the door slightly open for 1 hour.
- Refrigerate for at least 4 hours or overnight.
- In a microwave-safe bowl, heat white chocolate chips and heavy cream in 30-second intervals until smooth.
- Drizzle the white chocolate ganache over the cheesecake. Decorate with whipped cream, marshmallows, edible glitter, and unicorn horn candies.
