  • 1 cup sour cream

  • 2 tablespoons cocoa powder
  • 1 teaspoon pink food coloring
  • 1/2 cup rainbow sprinkles
  • 1 cup white chocolate chips
  • 1/2 cup heavy cream
  • Whipped cream
  • Rainbow marshmallows
  • Edible glitter
  • Unicorn horn candies

Instructions

  1. Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. In a bowl, combine Oreo crumbs and melted butter until well mixed. Press into the bottom of the prepared pan to form the crust. Bake for 10 minutes and set aside to cool.
  3. In a large bowl, beat cream cheese until smooth. Add sugar, sour cream, and vanilla; mix well. Add eggs one at a time, mixing after each addition, then mix in cocoa powder and pink food coloring. Gently fold in rainbow sprinkles.
  4. Pour the cheesecake batter over the cooled crust and spread evenly. Bake for 60-70 minutes or until the center is set. Turn off the oven and let the cheesecake cool inside with the door slightly open for 1 hour.
  5. Refrigerate for at least 4 hours or overnight.
  6. In a microwave-safe bowl, heat white chocolate chips and heavy cream in 30-second intervals until smooth.
  7. Drizzle the white chocolate ganache over the cheesecake. Decorate with whipped cream, marshmallows, edible glitter, and unicorn horn candies.
