Description

These delightful ube cinnamon rolls are a colorful twist on a classic favorite, packed with sweet ube flavor and topped with creamy frosting.


Ingredients

  • 1/2 cup granulated sugar
  • 1 package (2 1/4 tsp) active dry yeast
  • 1 cup warm milk (about 110°F)
  • 1/2 cup unsalted butter, melted
  • 1 large egg (room temperature)
  • 1 tsp ube extract
  • 1/4 tsp salt
  • 2 tbsp cinnamon
  • 1 1/2 cups packed brown sugar
  • 1/2 cup unsalted butter, softened
  • 4 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 3 tbsp Trader Joe’s Ube Spread
  • 1 1/2 cups powdered sugar

Instructions

  1. Make the Dough: In a large mixing bowl, combine the flour, sugar, and yeast. Add warm milk, melted butter, egg, ube extract, and salt. Mix until a dough forms. Knead for 5-10 minutes until smooth and elastic. Cover with plastic wrap and let rise for about 1 hour, or until doubled in size.
  2. Prepare the Filling: In a small bowl, mix cinnamon and brown sugar. Cream softened butter in another bowl.
  3. Roll Out the Dough: After the dough has risen, punch it down and roll it out into a large rectangle (about 1/4 inch thick). Spread softened butter, then sprinkle the cinnamon-sugar mixture, leaving a 1-inch border.
  4. Roll and Cut: Starting from the long edge closest to you, roll the dough tightly away and pinch the seam to seal. Cut into 1 1/2 inch pieces. Place in a greased 9×13 inch baking dish, cut side up. Let rise again for 30-45 minutes.
  5. Bake: Preheat the oven to 350°F. Bake for 25-30 minutes, or until golden brown. Let cool for 5 minutes.
  6. Make the Frosting: Beat cream cheese, softened butter, and Ube spread until smooth. Gradually add powdered sugar until desired consistency.
  7. Frost and Serve: Spread frosting over warm rolls and enjoy!
