Description

A delightful and colorful twist on a classic treat, these soft and fluffy ube cinnamon rolls are perfect for breakfast, snacks, or dessert.


Ingredients

  • 4 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 package (2 1/4 tsp) active dry yeast
  • 1 cup warm milk (about 110°F)
  • 1/2 cup unsalted butter, melted
  • 1 large egg (room temperature)
  • 1 tsp ube extract
  • 1/4 tsp salt
  • 2 tbsp cinnamon
  • 1 1/2 cups packed brown sugar
  • 1/2 cup unsalted butter, softened
  • 4 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 3 tbsp Trader Joe’s Ube Spread
  • 1 1/2 cups powdered sugar

Instructions

  1. In a large mixing bowl, combine flour, sugar, and yeast. Add warm milk, melted butter, egg, ube extract, and salt. Mix until a dough forms. Knead the dough for 5-10 minutes until smooth and elastic. Cover with plastic wrap and let it rise in a warm place for about 1 hour, or until it doubles in size.
  2. In a small bowl, mix cinnamon and brown sugar. Cream softened butter in another bowl until smooth.
  3. After the dough has risen, punch it down and roll it out on a floured surface into a large rectangle (1/4 inch thick). Spread the softened butter over the surface and sprinkle the cinnamon-sugar mixture evenly on top, leaving a 1-inch border.
  4. Starting from the long edge, roll the dough tightly away from you and pinch the seam to seal. Cut the roll into 1 1/2 inch pieces and place in a greased 9×13 inch baking dish, cut side up. Cover and let rise again for 30-45 minutes or until they double in size.
  5. Preheat the oven to 350°F (180°C). Bake for 25-30 minutes or until golden brown. Let cool for 5 minutes.
  6. Beat cream cheese, softened butter, and Ube spread until smooth. Gradually add powdered sugar until desired consistency is reached.
  7. Spread the frosting over the warm rolls with an offset spatula. Serve warm and enjoy!

Notes

Make sure to let the rolls cool completely before storing. They can be reheated in the microwave for a few seconds.
