  • 1 cup semi-sweet chocolate chips
  • 1 cup white chocolate chips
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream (for topping)
  • 1 cup semi-sweet chocolate chips (for topping)
  • 1/4 cup butter (for topping)
  • 1/2 cup Oreo crumbles (for garnish)
  • 1/2 cup chocolate shavings (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the crushed Oreo cookies with melted butter. Press this mixture into the bottom of a springform pan to create a base. Bake for 10 minutes and let it cool completely.
  3. In a large bowl, beat the cream cheese and sugar together until smooth and fluffy. Add heavy cream, cocoa powder, and vanilla extract, mixing until well blended. Fold in semi-sweet and white chocolate chips. Add eggs one at a time, mixing gently.
  4. Pour cheesecake filling over the cooled crust and smooth the top. Bake for 55-60 minutes or until the center is just set with a slight jiggle. Allow it to cool at room temperature, then refrigerate for at least 4 hours or overnight.
  5. Heat heavy cream in a saucepan until just boiling. Remove from heat and stir in semi-sweet chocolate chips and butter until smooth. Let cool slightly.
  6. Pour fudge topping over chilled cheesecake, spreading evenly. Garnish with Oreo crumbles and chocolate shavings.
