A delicious no-bake ice cream cake combining layers of strawberry ice cream, chocolate ganache, and whipped cream for a refreshing dessert.

- 1 1/2 cups chocolate sandwich cookies, crushed
- 1/4 cup melted butter
- 1 1/2 quarts strawberry ice cream
- 1/2 cup strawberry jam
- 1 cup semisweet chocolate chips
- 1/2 cup heavy cream (for ganache)
- 1 cup heavy cream (for whipped cream)
- 2 tablespoons powdered sugar
Instructions
- In a mixing bowl, combine the crushed chocolate sandwich cookies with melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan. Freeze for 10 minutes.
- Spread the strawberry ice cream over the cookie crust, then drizzle strawberry jam on top, creating swirls. Freeze for 30 minutes.
- Melt the semisweet chocolate chips with heavy cream until smooth. Pour the ganache over the ice cream layer and freeze for another 10 minutes.
- Whip the remaining heavy cream with powdered sugar until fluffy. Top the cake with whipped cream and garnish as desired.
