- 3/4 cup flour
- 1/2 cup sugar
- 3/4 cup cocoa powder
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp salt
- 2 large eggs
- 1 cup milk
- 1/2 cup vegetable oil
- 2 tsp vanilla extract
- 1 cup boiling water
- 1 cup creamy peanut butter
- 1/2 cup butter, softened
- 2 cups powdered sugar
- 1 tsp vanilla extract
- 1/4 cup heavy cream
- 1 cup mini peanut butter cups, chopped
- 1/4 cup crushed peanuts
- 1/2 cup chocolate ganache (optional)
Instructions
- Preheat your oven to 350°F (175°C). In a large bowl, mix the dry ingredients: flour, sugar, cocoa powder, baking powder, baking soda, and salt. Add in the wet ingredients: eggs, milk, vegetable oil, and vanilla extract. Gradually stir in the boiling water until everything is smooth.
- Divide the batter evenly into three cake pans and bake for 30-35 minutes. Once done, allow the cakes to cool completely on wire racks.
- In another bowl, beat together the creamy peanut butter, softened butter, powdered sugar, vanilla extract, and heavy cream until it’s smooth and fluffy.
- Once the cakes are cooled, stack them up with a generous layer of frosting in between each layer. Frost the top and sides of the cake with the remaining peanut butter frosting. Garnish with chopped mini peanut butter cups, crushed peanuts, and a drizzle of chocolate ganache. Optionally, sprinkle a little sea salt on top before serving.
Notes
Store leftover cake in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. Allow to reach room temperature before serving.
