Ingredients

  • 1/2 cup sugar
  • 3/4 cup cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 1 cup creamy peanut butter
  • 1/2 cup butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 1/4 cup heavy cream
  • 1 cup mini peanut butter cups, chopped
  • 1/4 cup crushed peanuts
  • 1/2 cup chocolate ganache (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, milk, vegetable oil, and vanilla extract. Slowly mix in the boiling water until smooth.
  4. Pour the batter evenly into three cake pans and bake for 30-35 minutes. Let the cakes cool on wire racks.
  5. In another bowl, beat together the peanut butter, softened butter, powdered sugar, vanilla extract, and heavy cream until smooth and fluffy.
  6. Once the cakes are cool, stack them with frosting between each layer, and frost the top and sides with remaining frosting.
  7. Garnish with chopped mini peanut butter cups, crushed peanuts, and drizzle optional chocolate ganache on top.

Notes

For best results, make sure your butter is softened to room temperature for the frosting. You can also add more peanut butter cups or chocolate chips to the batter for extra flavor.
