Description

Ingredients

  • 1 1/2 cups chocolate chip cookie crumbs
  • 1/4 cup unsalted butter, melted
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour (heat-treated)
  • 1/4 tsp salt
  • 1/2 cup mini chocolate chips
  • 16 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 1/4 cup sour cream
  • 2 large eggs
  • 1/2 cup mini chocolate chips
  • Whipped cream (for topping)
  • Chocolate drizzle (for topping)
  • Extra cookie dough chunks (for topping)

Instructions

  1. Preheat your oven to 325°F (165°C). In a bowl, combine the chocolate chip cookie crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan and bake for 8-10 minutes. Let it cool completely.
  2. In a mixing bowl, cream together 1/2 cup of softened butter, granulated sugar, and brown sugar until fluffy. Stir in the vanilla extract, flour, and salt. Fold in the mini chocolate chips. Roll the dough into small balls and refrigerate them.
  3. Beat the cream cheese and 3/4 cup of sugar until smooth. Add sour cream and vanilla, mixing until well combined. Incorporate the eggs one at a time, then fold in the mini chocolate chips and half of the cookie dough balls.
  4. Pour the cheesecake filling over the cooled crust and drop the remaining cookie dough balls on top. Wrap the springform pan in foil and place it in a roasting pan filled with hot water.
  5. Bake for 60-70 minutes or until the center is just set. Cool the cheesecake in the oven with the door ajar for 1 hour, then chill in the refrigerator for at least 4 hours.
  6. Before serving, garnish the cheesecake with whipped cream, chocolate drizzle, or extra cookie dough chunks.

Notes

Chill the cheesecake overnight for the best flavor and texture. Use pre-made cookie dough for a quicker option.
