A rich and moist chocolate cake loaded with colorful M&M candies, perfect for celebrations.
Ingredients

- 2 cups all-purpose flour
- 2 1/2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 1 teaspoon espresso powder (optional)
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 2 cups chocolate frosting
- 1 1/2 cups M&M candies
Instructions
- Preheat your oven to 350°F (177°C). Grease and line two 9-inch cake pans with parchment paper.
- In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, salt, and espresso powder.
- Add the buttermilk, vegetable oil, eggs, and vanilla extract to the dry ingredients. Mix on medium speed until well combined and smooth.
- Carefully pour the boiling water into the batter, mixing on low speed until well combined.
- Divide the batter evenly between the two prepared cake pans and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
- Once cooled, place one layer on a serving plate, frost with chocolate frosting, and sprinkle with M&M candies. Add the second layer and frost the top and sides.
- Decorate with remaining M&M candies. Enjoy!
Notes
For a funfetti version, add colorful sprinkles to the batter along with the M&Ms.
