Ingredients

  • 2 cups all-purpose flour
  • 1 3/4 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 2 cups dark chocolate ganache
  • 1 cup chocolate shavings

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 8-inch cake pans.
  2. In a large bowl, mix together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients, and beat until smooth.
  4. Carefully stir in the boiling water to the mixture—it will be thin.
  5. Pour the batter evenly into the prepared cake pans.
  6. Bake in the preheated oven for 30-35 minutes, or until a toothpick comes out clean.
  7. Let the cakes cool in the pans for about 10 minutes, then transfer them to a wire rack to cool completely.
  8. Once cooled, spread a layer of ganache between the cake layers and on the top.
  9. Decorate with chocolate shavings and chill for 1 hour before serving.

Notes

Store the cake in an airtight container in the refrigerator for up to 5 days. It can also be frozen for up to 3 months.
