Description

Ingredients

  • 4 eggs
  • 1/2 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • Powdered sugar (for dusting)
  • 2 cups heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 can (21 oz) cherry pie filling
  • Chocolate shavings (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 10×15-inch jelly roll pan with parchment paper.
  2. In a large bowl, beat the eggs and granulated sugar until thick and pale.
  3. Sift in the flour, cocoa powder, baking powder, and salt. Gently fold until combined.
  4. Add the vegetable oil and vanilla extract, and fold until smooth. Pour the batter into the prepared pan, spreading it evenly.
  5. Bake for 12-15 minutes, or until the cake springs back when lightly touched.
  6. While the cake is still warm, dust the top with powdered sugar. Invert the cake onto a clean kitchen towel and carefully peel off the parchment paper.
  7. Roll the cake from the short end with the towel inside. Let it cool completely.
  8. In a bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  9. Carefully unroll the cooled cake and spread the whipped cream over the surface. Spoon cherry pie filling evenly over the cream.
  10. Roll the cake back up without the towel. Place seam side down on a serving platter.
  11. Garnish the top with chocolate shavings. Refrigerate for at least 1 hour before slicing and serving.

Notes

Store any leftover cake in the refrigerator wrapped tightly in plastic wrap for up to 3 days. Can freeze for up to 2 months.
