- 4 eggs
- 1/2 cup granulated sugar
- 1/2 cup all-purpose flour
- 1/4 cup cocoa powder
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract
- Powdered sugar (for dusting)
- 2 cups heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 can (21 oz) cherry pie filling
- Chocolate shavings (for garnish)
Instructions
- Preheat your oven to 350°F (175°C). Grease and line a 10×15-inch jelly roll pan with parchment paper.
- In a large bowl, beat the eggs and granulated sugar until thick and pale.
- Sift in the flour, cocoa powder, baking powder, and salt. Gently fold until combined.
- Add the vegetable oil and vanilla extract, and fold until smooth. Pour the batter into the prepared pan, spreading it evenly.
- Bake for 12-15 minutes, or until the cake springs back when lightly touched.
- While the cake is still warm, dust the top with powdered sugar. Invert the cake onto a clean kitchen towel and carefully peel off the parchment paper.
- Roll the cake from the short end with the towel inside. Let it cool completely.
- In a bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- Carefully unroll the cooled cake and spread the whipped cream over the surface. Spoon cherry pie filling evenly over the cream.
- Roll the cake back up without the towel. Place seam side down on a serving platter.
- Garnish the top with chocolate shavings. Refrigerate for at least 1 hour before slicing and serving.
Notes
Store any leftover cake in the refrigerator wrapped tightly in plastic wrap for up to 3 days. Can freeze for up to 2 months.
