  • 1/2 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • Powdered sugar (for dusting)
  • 2 cups heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 can (21 oz) cherry pie filling
  • Chocolate shavings (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 10×15-inch jelly roll pan with parchment paper.
  2. In a large bowl, beat together the eggs and granulated sugar until thick and pale.
  3. Sift in the flour, cocoa powder, baking powder, and salt. Gently fold these dry ingredients into the egg mixture until combined.
  4. Add the vegetable oil and vanilla extract, folding until the batter is smooth. Pour into the prepared pan, spreading it evenly.
  5. Bake for 12-15 minutes, or until the cake springs back when lightly touched.
  6. While warm, dust with powdered sugar. Invert the cake onto a clean kitchen towel and carefully peel off the parchment paper.
  7. Roll the cake from the short end with the towel inside. Let cool completely in this rolled form.
  8. In a bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  9. Unroll the cake and spread whipped cream evenly over the surface. Spoon cherry pie filling over the cream.
  10. Roll the cake back up without the towel. Place seam side down on a serving platter.
  11. Garnish with chocolate shavings. Refrigerate for at least 1 hour before slicing and serving.

Notes

Allow the cake to cool completely before adding the whipped cream and cherry filling to prevent melting. Store leftovers in the refrigerator, best consumed within 3-4 days.
