  • 2 (8 oz) tubs whipped cream cheese
  • 2 cups powdered sugar (sifted)
  • 1 teaspoon vanilla extract
  • 2 teaspoons ube flavoring
  • 4 eggs
  • 1 cup milk
  • 1/2 cup vanilla coffee creamer
  • 12 tablespoons cinnamon sugar
  • 2 loaves brioche bread, sliced thick
  • Fresh strawberries (for garnish)
  • Fresh blackberries (for garnish)
  • 1 1/2 cups white sugar
  • 1/4 cup brown sugar
  • 1 cup water
  • 23 teaspoons ube flavoring
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons cornstarch + 3 tablespoons water (optional for a thicker syrup)

Instructions

  1. In a medium bowl, combine whipped cream cheese and sifted powdered sugar. Mix until smooth. Add vanilla extract and ube flavoring. Mix until well combined.
  2. In a large bowl, whisk together eggs, milk, coffee creamer, cinnamon sugar, and vanilla extract until well blended. Dip slices of brioche bread into the custard, allowing them to soak and absorb the liquid.
  3. Heat a skillet over medium-high heat and add a pat of butter. Fry the soaked brioche bread slices in the skillet until golden brown on both sides. Set aside on a plate.
  4. Using a knife, make a deep slit into the top of each French toast slice. Pipe the ube cream cheese mixture into the slit and over the top of the French toast.
  5. In a medium saucepan, combine white sugar, brown sugar, and water. If desired, add a cornstarch slurry for a thicker syrup. Bring the mixture to a boil and then reduce to a simmer for about 5 minutes, avoiding stirring during this time. Remove from heat and stir in the ube flavoring and vanilla extract. Allow the syrup to cool for at least 10 minutes before serving.
  6. Top the stuffed French toast with fresh strawberries and blackberries. Drizzle with homemade ube syrup and serve immediately.

Notes

For extra indulgence, you can add whipped cream or a dusting of powdered sugar. Leftovers can be stored in an airtight container in the refrigerator for 2-3 days.
