Description

A delightful dessert featuring a soft cake with a unique ube flavor, filled with a creamy mixture for a visually stunning treat.


Ingredients

  • 6 egg yolks
  • 3 tablespoons white granulated sugar
  • 80 ml coconut oil (or canola oil)
  • 100 ml coconut milk (or whole milk/evaporated milk)
  • 10 tablespoons cake flour
  • 2 teaspoons ube flavor extract (divided)
  • 6 egg whites
  • 1/4 teaspoon cream of tartar
  • 11 tablespoons granulated sugar
  • 1 cup heavy whipping cream
  • 1/2 cup cream cheese (softened)
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and position a wire rack in the middle.
  2. Combine 1 teaspoon of ube flavor extract with the coconut milk in a measuring glass.
  3. In a small bowl, whisk together the egg yolks, sugar, cake flour, and oil. Add the milk and ube extract mixture and mix until smooth.
  4. In a stand mixer, beat the egg whites until frothy. Add the cream of tartar, then gradually add the sugar until stiff peaks form.
  5. Gently fold about 1 cup of meringue into the egg yolk mixture, then fold in the remaining meringue until combined.
  6. Line a baking pan with parchment paper and pour in the batter. Bake for 10-15 minutes.
  7. Once baked, sprinkle powdered sugar over the hot cake, cover with a towel, flip onto a flat surface, and roll from the shorter side. Let it cool for 30-40 minutes, seam side down.
  8. Beat the cream cheese until smooth. Gradually add the powdered sugar, then fold in the whipped cream. Reserve 2 cups for decoration.
  9. Unroll the cooled cake, spread the cream cheese filling, roll it back, cover with the remaining filling, and sprinkle crumbs over the frosting.

Notes

Ensure to beat the egg whites to stiff peaks for a light cake. Cool the cake seam side down to maintain shape.
