  • 1 lb (450g) large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • Salt to taste
  • Pepper to taste
  • 8 oz (225g) orzo pasta
  • 1 cup diced tomatoes
  • 1 cup spinach
  • 1/4 cup grated Parmesan cheese
  • Fresh basil for garnish

Instructions

  1. Cook the orzo pasta according to the package directions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the shrimp, paprika, garlic powder, salt, and pepper; cook until the shrimp are pink and opaque, about 3-4 minutes.
  4. Stir in the diced tomatoes and spinach, cooking until the spinach wilts.
  5. Add the cooked orzo and mix well.
  6. Remove from heat and stir in the Parmesan cheese. Garnish with fresh basil before serving.

Notes

Use fresh shrimp for the best flavor. Adjust the seasoning to your taste and add other vegetables if desired.
