- 1/4 cup cornstarch
- 1 cup canned pumpkin purée
- 1/3 cup sour cream, room temperature
- 1 tbsp pumpkin pie spice
- 1 tbsp vanilla extract
- 3 whole eggs, room temperature
- 2 egg yolks, room temperature
- 3/4 cup heavy cream
- 1/4 cup powdered sugar
Instructions
- Prepare the Streusel: Mix the butter, brown sugar, flour, pumpkin pie spice, and salt until thick crumbs form. Refrigerate while working on the cheesecake.
- Prepare the Spiced Brown Sugar Filling: Combine the brown sugar and pumpkin pie spice in a small bowl and set aside.
- Make the Biscoff Crust: Preheat oven to 350°F. Wrap the bottom and sides of a 9-inch springform pan with foil. Pulse Biscoff cookies until finely ground, mix with melted butter and sugar, press into the pan, and bake for 15 minutes. Let cool.
- Make the Pumpkin Cheesecake: Beat cream cheese, sugar, and cornstarch until smooth. Add pumpkin purée, sour cream, pumpkin pie spice, and vanilla. Mix until smooth. Add eggs and yolks one at a time.
- Assemble the Cheesecake: Pour half of the cheesecake batter into the crust, sprinkle the spiced brown sugar filling, then pour the remaining batter on top and smooth it out. Sprinkle the streusel on top.
- Bake in a Water Bath: Place the cheesecake in a roasting pan, pour boiling water around it, and bake for 1 hour and 30 minutes.
- Cool and Chill: Remove the cheesecake, let cool completely, then refrigerate for at least 8 hours.
- Prepare the Whipped Cream: Beat heavy cream and powdered sugar until stiff peaks form.
- Assemble and Serve: Remove the cheesecake from the pan, pipe whipped cream around the edges, slice, and serve.
Notes
Make sure all ingredients are at room temperature for best results. If the cheesecake cracks, cover it with whipped cream or chocolate sauce.
