Description

A delicious dessert that combines creamy cheesecake with decadent caramel and chocolate flavors, perfect for special occasions.


Ingredients

  • 2 cups crushed graham crackers
  • 1/2 cup chopped pecans
  • 1/8 cup light or dark brown sugar
  • 10 tbsp melted butter
  • 24 oz cream cheese, room temperature
  • 3/4 cup light or dark brown sugar, packed
  • 1/2 cup sour cream, room temperature
  • 1/4 cup heavy cream, room temperature
  • 1 tsp pure vanilla extract
  • 4 large eggs, room temperature
  • 1 tbsp unsweetened cocoa powder
  • 1 cup cane sugar
  • 4 tbsp unsalted butter, cubed and room temperature
  • 1/2 cup heavy cream, room temperature
  • 1 tsp vanilla extract
  • 1 tsp salt
  • 1/2 cup chopped pecans for topping
  • Mini chocolate chips (optional)

Instructions

  1. Preheat the oven to 325°F (160°C). Spray a 9-inch springform pan and line it with parchment paper.
  2. Crush the graham crackers and mix them with pecans, brown sugar, and melted butter. Press this mixture into the pan and bake for 11 minutes. Set aside.
  3. Beat the cream cheese and brown sugar until smooth. Add in the sour cream, heavy cream, and vanilla, mixing well. Add the eggs one at a time. Reserve 1/3 of the batter and mix in cocoa powder.
  4. Pour half of the plain cheesecake batter into the crust. Add dollops of half of the chocolate batter and swirl. Pour in the remaining plain batter and add dollops of the remaining chocolate batter, swirling again.
  5. Prepare a water bath and bake for 70-80 minutes. Let the cheesecake cool in the oven with the door cracked slightly.
  6. Melt sugar over medium heat until it turns amber, then add half of the butter, followed by the rest. Whisk in warmed heavy cream, vanilla, and salt. Let it cool.
  7. Pour the cooled caramel on top of the cheesecake, then garnish with pecans and chocolate chips if desired. Chill for at least 6 hours or overnight.

Notes

Make sure all ingredients are at room temperature before mixing for a smooth batter. Use high-quality vanilla extract for better flavor.
