Ingredients

- 1/2 lb lean ground turkey
- 1 garlic clove, minced
- 1/4 cup chopped parsley or cilantro
- 1/4 cup finely diced onion
- Salt & pepper to taste
- 1 handful of sautéed kale or spinach
- 1/2 avocado, sliced
- 1 cup sweet potato waffle fries
- 1 tbsp olive oil
- Optional: tahini or lemon juice for topping
Instructions
- In a bowl, mix together the ground turkey, minced garlic, parsley, onion, salt, and pepper. Roll into small meatballs and place on a baking sheet.
- Bake at 375°F (190°C) for about 20 minutes or until fully cooked.
- While the meatballs are cooking, prepare the sweet potato waffle fries according to package instructions until crispy and golden brown.
- Heat olive oil in a pan over medium heat. Add the kale or spinach and sauté until wilted, seasoning with a pinch of salt.
- On a plate, start with the sautéed greens. Add sliced avocado, crispy waffle fries, and cooked meatballs on top.
- Drizzle with tahini or lemon juice if desired.
Notes
This dish is perfect for meal prep. Store leftovers in airtight containers for up to 3 days. Reheat the meatballs and greens separately to maintain crispness.
