Description
A delicious and comforting dish featuring tender turkey scallops wrapped with coppa and mozzarella, served with a rich Madeira sauce.
Ingredients

- 3 large turkey scallops, flattened
- 12 slices of coppa
- 1 bag of grated mozzarella
- 1 bunch of fresh parsley, chopped
- 100 ml Madeira or port
- 2 shallots, finely chopped
- 3 tablespoons thick sour cream soup
- 20 g butter
- 1 tablespoon olive oil
- Freshly ground salt and black pepper
Instructions
- Place each turkey scallop between two sheets of baking paper and flatten them out.
- On a sheet of food film, place one scallop, top with 3-4 slices of coppa, mozzarella, and parsley. Roll tightly and tie the ends.
- Cook the rolls in simmering water or steam for 15 minutes, allow to cool slightly, and chill in the refrigerator for 15 minutes.
- In a frying pan, heat oil and brown the rolls for about 5 minutes on each side.
- For the Madeira sauce, sauté shallots in oil until translucent, add Madeira, and reduce for 5 minutes. Stir in sour cream and butter, then season to taste.
- Cut the rolls into thick rounds, arrange on a plate, drizzle with Madeira sauce, and sprinkle with parsley. Serve with sides such as steamed vegetables or mash.
Notes
Ensure the turkey scallops are flattened evenly for consistent cooking. Leftovers can be stored in an airtight container for up to 3 days or frozen for 2 months.
