- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 16 ounces cream cheese, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 cup pineapple puree
- 1 teaspoon vanilla extract
- 1 cup sour cream
- 1/2 cup chopped nuts
- 1/4 cup shredded coconut
- 1/2 cup pineapple glaze
Instructions
- Preheat your oven to 325°F (165°C).
- In a bowl, mix the graham cracker crumbs with melted butter. Press this mixture into the bottom of a 9-inch springform pan to create the crust.
- In another bowl, beat the softened cream cheese and granulated sugar until smooth.
- Add the eggs one at a time, mixing well after each addition. Then, stir in the pineapple puree and vanilla extract.
- Pour the cheesecake mixture over the crust in the springform pan.
- Bake in the preheated oven for 50-60 minutes, or until the center is set.
- Allow the cheesecake to cool slightly, then spread the sour cream on top.
- Chill the cheesecake in the refrigerator for at least 4 hours before serving.
- Just before serving, top with chopped nuts, shredded coconut, and drizzle with pineapple glaze.
Notes
Use fresh pineapple puree for an even fresher taste. Store leftover cheesecake covered in the refrigerator for up to a week.
