Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 cup pineapple puree
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 1/2 cup chopped nuts
  • 1/4 cup shredded coconut
  • 1/2 cup pineapple glaze

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. Mix the graham cracker crumbs with the melted butter and press into the bottom of a 9-inch springform pan.
  3. In a large bowl, beat the cream cheese and sugar together until smooth.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Mix in the pineapple puree and vanilla extract.
  6. Pour the creamy mixture over the crust in the springform pan.
  7. Bake for 50-60 minutes or until set.
  8. Let it cool slightly, then spread sour cream on top of the cheesecake.
  9. Chill in the refrigerator for at least 4 hours.
  10. Before serving, top with chopped nuts, shredded coconut, and drizzle with pineapple glaze.

Notes

For a stronger pineapple flavor, add more pineapple puree or use fresh pineapple. You can toast the nuts and coconut for added flavor before topping the cheesecake.
