- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 cup mango puree
- 1 teaspoon vanilla extract
- 1 tablespoon lime juice
- 1/4 cup all-purpose flour
- 1/2 cup heavy cream
- Fresh mango cubes for topping
- 1/2 cup mango jelly or glaze
Instructions
- Preheat the oven to 325°F (165°C) and grease a 9-inch springform pan.
- In a bowl, mix the graham cracker crumbs with the melted butter and press the mixture into the bottom of the pan.
- Bake the crust for 10 minutes, then let it cool.
- In another bowl, beat the softened cream cheese and granulated sugar until smooth.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the mango puree, vanilla extract, lime juice, and flour until combined.
- Gently fold in the heavy cream, then pour this mixture over the cooled crust.
- Bake the cheesecake for 50-60 minutes, or until the center is set.
- After baking, let it cool to room temperature, then refrigerate for at least 4 hours.
- Before serving, spread mango jelly over the top and decorate with fresh mango cubes.
Notes
Use ripe, fresh mangoes for the best flavor. Make sure cream cheese is at room temperature for easier mixing. This cheesecake is best enjoyed chilled.
