- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 cup mango puree
- 1 teaspoon vanilla extract
- 1 tablespoon lime juice
- 1/4 cup all-purpose flour
- 1/2 cup heavy cream
- Fresh mango cubes for topping
- 1/2 cup mango jelly or glaze
Instructions
- Preheat your oven to 325°F (165°C) and grease a 9-inch springform pan.
- In a bowl, mix the graham cracker crumbs and melted butter. Press this mixture into the bottom of the pan.
- Bake the crust for 10 minutes, then let it cool.
- In a separate bowl, beat the cream cheese and granulated sugar until smooth.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the mango puree, vanilla extract, lime juice, and all-purpose flour.
- Gently fold in the heavy cream and pour the mixture over the crust.
- Bake for 50-60 minutes or until the center is set.
- Allow the cheesecake to cool to room temperature, then refrigerate it for at least 4 hours.
- Before serving, spread the mango jelly over the top and decorate with fresh mango cubes.
Notes
Store leftover cheesecake in the refrigerator for up to 4-5 days or freeze for longer storage.
