Description

A delightful dessert combining creamy cheesecake with vibrant tropical fruits like kiwis, pineapples, and mangoes.


Ingredients

  • 3 and 1/3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter (cold and cut into cubes)
  • Grated zest from 1 lemon (optional)
  • 1/3 cup light brown sugar
  • 1/3 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 16 oz (450 g) cream cheese (softened)
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 34 kiwis (peeled and diced)
  • 3/4 cup diced pineapple (canned, not fresh)
  • 3/4 cup diced mango
  • 1/2 cup powdered sugar
  • 23 teaspoons milk (or cream)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9-inch springform pan with parchment paper and nonstick spray.
  2. In a bowl, mix flour, baking powder, salt, brown sugar, granulated sugar, and lemon zest. Blend in cold butter until crumbly. Add eggs and vanilla extract, and mix until just combined.
  3. Press 2/3 of the crumb mixture into the prepared pan and refrigerate.
  4. For the filling, combine cream cheese, sugar, cornstarch, and vanilla in a medium bowl. Add eggs one at a time, mixing gently.
  5. Pour half of the cheesecake mixture over the crust, add diced kiwis, then spread the remaining cheesecake mixture over it. Top with pineapple, mango, and remaining crumb mixture.
  6. Bake for 55-65 minutes until golden brown; cover with foil if over-browning.
  7. For icing, mix powdered sugar with milk until smooth. Adjust consistency as needed.
  8. Cool the cake completely in the pan, then drizzle with icing before serving.

Notes

Store leftover cake in an airtight container in the refrigerator for up to 5 days. It can also be frozen for a few months.
