A delightful dessert combining creamy cheesecake with vibrant tropical fruits like kiwis, pineapples, and mangoes.

- 3 and 1/3 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 3/4 cup unsalted butter (cold and cut into cubes)
- Grated zest from 1 lemon (optional)
- 1/3 cup light brown sugar
- 1/3 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 16 oz (450 g) cream cheese (softened)
- 1/2 cup granulated sugar
- 2 tablespoons cornstarch
- 2 large eggs
- 1 teaspoon vanilla extract
- 3–4 kiwis (peeled and diced)
- 3/4 cup diced pineapple (canned, not fresh)
- 3/4 cup diced mango
- 1/2 cup powdered sugar
- 2–3 teaspoons milk (or cream)
Instructions
- Preheat the oven to 350°F (175°C) and line a 9-inch springform pan with parchment paper and nonstick spray.
- In a bowl, mix flour, baking powder, salt, brown sugar, granulated sugar, and lemon zest. Blend in cold butter until crumbly. Add eggs and vanilla extract, and mix until just combined.
- Press 2/3 of the crumb mixture into the prepared pan and refrigerate.
- For the filling, combine cream cheese, sugar, cornstarch, and vanilla in a medium bowl. Add eggs one at a time, mixing gently.
- Pour half of the cheesecake mixture over the crust, add diced kiwis, then spread the remaining cheesecake mixture over it. Top with pineapple, mango, and remaining crumb mixture.
- Bake for 55-65 minutes until golden brown; cover with foil if over-browning.
- For icing, mix powdered sugar with milk until smooth. Adjust consistency as needed.
- Cool the cake completely in the pan, then drizzle with icing before serving.
Notes
Store leftover cake in an airtight container in the refrigerator for up to 5 days. It can also be frozen for a few months.
