- 1 box yellow cake mix
- 1 cup crushed pineapple with juice
- 1 cup coconut flakes
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 2 cups whipped topping
- 1/2 cup shredded coconut for topping
Instructions
- Prepare the cake mix according to the package instructions and bake it in a rectangular dish.
- Once the cake is warm, poke holes in it, and pour the crushed pineapple with juice over the top.
- In a bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth.
- Gently fold in the whipped topping, and then spread this mixture over the cooled cake.
- Sprinkle the coconut flakes and shredded coconut on top.
- Refrigerate the cake for 2 hours, then serve it chilled.
Notes
Make sure to fully cool the cake before adding the topping. Toasting the shredded coconut enhances the flavor.
