  • 6 oz dark chocolate, chopped
  • 1 cup heavy cream (for dark mousse)
  • 2 egg yolks (for dark mousse)
  • 2 tbsp sugar (for dark mousse)
  • 2 tbsp butter (for milk mousse)
  • 2 tbsp water (for milk mousse)
  • 6 oz milk chocolate, chopped
  • 1 cup heavy cream (for milk mousse)
  • 2 egg yolks (for milk mousse)
  • 2 tbsp sugar (for milk mousse)
  • 2 tbsp butter (for white mousse)
  • 2 tbsp water (for white mousse)
  • 6 oz white chocolate, chopped
  • 1 cup heavy cream (for white mousse)
  • 2 egg yolks (for white mousse)
  • 2 tbsp sugar (for white mousse)

Instructions

  1. Preheat the oven to 350°F (175°C). Mix chocolate cookie crumbs with melted butter, press the mixture into the base of a springform pan, and bake for 10 minutes. Let it cool completely.
  2. Melt dark chocolate, butter, and water over a double boiler. Whip the heavy cream to stiff peaks. In another bowl, beat egg yolks with sugar until pale, then fold the chocolate mixture and whipped cream together. Spread this mousse over the cooled crust and chill for 30 minutes.
  3. Follow the same process with milk chocolate. Spread this mousse over the dark chocolate layer and refrigerate for another 30 minutes.
  4. Repeat these steps with white chocolate. Spread over the milk chocolate layer and refrigerate for 30 minutes.
  5. Once all layers are set, carefully run a knife around the edge of the pan to release the torte and remove the springform. Serve chilled and enjoy the luscious layers!

Notes

Use high-quality chocolate for the richest flavor. Make sure to whip the cream to stiff peaks for a fluffy mousse texture.
