  • 1 cup granulated sugar
  • 2 tablespoons cocoa powder
  • 3 large eggs
  • 1/4 cup powdered sugar
  • 1 1/2 cups semi-sweet chocolate chips
  • 2 cups heavy cream, divided
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy cream
  • 1 cup semi-sweet chocolate chips
  • Chocolate shavings
  • Fresh berries
  • Whipped cream

Instructions

  1. Preheat the oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. Mix Oreo crumbs with melted butter until combined and press into the bottom of the prepared pan. Bake for 10 minutes, then let it cool.
  3. Beat softened cream cheese in a large bowl until smooth. Mix in granulated sugar, sour cream, and vanilla extract, then beat in eggs one at a time. Stir in melted chocolate and cocoa powder until fully blended.
  4. Pour the cheesecake batter over the cooled crust and bake for 60-70 minutes, or until the center is set. Cool the cheesecake in the oven with the door slightly ajar for 1 hour.
  5. Melt 1 1/2 cups of semi-sweet chocolate chips in the microwave and let cool slightly. Whip 1 1/2 cups of heavy cream with powdered sugar and vanilla extract until stiff peaks form. Fold in the melted chocolate and spread over the cooled cheesecake.
  6. Chill the cheesecake in the refrigerator for at least 4 hours or overnight to set.
  7. Heat 1 cup of semi-sweet chocolate chips and 1/2 cup heavy cream in the microwave in 30-second intervals, stirring until smooth. Pour the ganache over the mousse layer.
  8. Top with whipped cream, chocolate shavings, and fresh berries before serving.

Notes

Make sure all your ingredients are at room temperature for a smooth mixture. Avoid over-baking to keep the cheesecake creamy.
