Instructions

  1. Preheat Oven: Set your oven to 325°F (163°C). Grease a 9-inch springform pan.
  2. Prepare Crust: Mix Oreo crumbs with melted butter until combined. Press the mixture into the bottom of the prepared pan. Bake for 10 minutes, then let it cool.
  3. Make Cheesecake Filling: Beat softened cream cheese in a large bowl until smooth. Mix in granulated sugar. Add sour cream and vanilla extract, then beat in eggs one at a time. Stir in melted chocolate and cocoa powder until fully blended.
  4. Bake Cheesecake: Pour the cheesecake batter over the cooled crust. Bake for 60-70 minutes, or until the center is set and the edges are lightly browned. Let the cheesecake cool in the oven with the door slightly ajar for 1 hour.
  5. Prepare Chocolate Mousse: Melt 1 1/2 cups of semi-sweet chocolate chips in the microwave and let it cool slightly. Whip 1 1/2 cups of heavy cream with powdered sugar and vanilla extract until stiff peaks form. Fold in the melted chocolate. Spread the mousse over the cooled cheesecake.

  7. Make Chocolate Ganache: Heat 1 cup of semi-sweet chocolate chips and 1/2 cup heavy cream in the microwave in 30-second intervals, stirring until smooth. Pour the ganache over the mousse layer.
