- 1 1/2 cups all-purpose flour
- 1 1/4 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 large eggs

- 1/2 cup vegetable oil
- 1 tsp vanilla extract
- 1 cup boiling water
- 6 oz dark chocolate (70% cocoa), chopped
- 1 cup heavy cream (for dark chocolate mousse)
- 2 tbsp powdered sugar (for dark chocolate mousse)
- 1 tsp vanilla extract (for dark chocolate mousse)
- 6 oz milk chocolate, chopped
- 1 cup heavy cream (for milk chocolate mousse)
- 2 tbsp powdered sugar (for milk chocolate mousse)
- 1 tsp vanilla extract (for milk chocolate mousse)
- 6 oz white chocolate, chopped
- 1 cup heavy cream (for white chocolate mousse)
- 2 tbsp powdered sugar (for white chocolate mousse)
- 1 tsp vanilla extract (for white chocolate mousse)
Instructions
- Preheat your oven to 350°F (175°C). Grease and line the bottom of an 8-inch round cake pan.
- In a large bowl, mix flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add eggs, milk, vegetable oil, and vanilla extract. Mix until smooth.
- Slowly add boiling water and mix well.
- Pour the batter into the cake pan and bake for 30-35 minutes, or until a toothpick comes out clean. Let it cool before moving to a wire rack.
- Melt dark chocolate in a double boiler or microwave until smooth. Let it cool slightly.
- In another bowl, whip 1 cup heavy cream with 2 tbsp powdered sugar and 1 tsp vanilla until soft peaks form. Fold in melted dark chocolate.
- For milk chocolate mousse, follow the same steps as dark chocolate mousse using milk chocolate.
- Repeat the same process with white chocolate for white chocolate mousse.
- Slice the cooled cake into two layers. Spread dark chocolate mousse on the first layer, add the second layer, and then spread milk chocolate mousse followed by white chocolate mousse.
- Refrigerate for at least 4 hours (or overnight) to let the mousses set.
- Before serving, garnish with chocolate shavings, berries, or whipped cream.
Notes
Store leftover cake in an airtight container in the refrigerator for up to 3 days. Best served chilled.
