Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1 1/4 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 large eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 cup boiling water
  • 6 oz dark chocolate (70% cocoa), chopped
  • 1 cup heavy cream (for dark chocolate mousse)
  • 2 tbsp powdered sugar (for dark chocolate mousse)
  • 1 tsp vanilla extract (for dark chocolate mousse)
  • 6 oz milk chocolate, chopped
  • 1 cup heavy cream (for milk chocolate mousse)
  • 2 tbsp powdered sugar (for milk chocolate mousse)
  • 1 tsp vanilla extract (for milk chocolate mousse)
  • 6 oz white chocolate, chopped
  • 1 cup heavy cream (for white chocolate mousse)
  • 2 tbsp powdered sugar (for white chocolate mousse)
  • 1 tsp vanilla extract (for white chocolate mousse)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line the bottom of an 8-inch round cake pan.
  2. In a large bowl, mix flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add eggs, milk, vegetable oil, and vanilla extract. Mix until smooth.
  4. Slowly add boiling water and mix well.
  5. Pour the batter into the cake pan and bake for 30-35 minutes, or until a toothpick comes out clean. Let it cool before moving to a wire rack.
  6. Melt dark chocolate in a double boiler or microwave until smooth. Let it cool slightly.
  7. In another bowl, whip 1 cup heavy cream with 2 tbsp powdered sugar and 1 tsp vanilla until soft peaks form. Fold in melted dark chocolate.
  8. For milk chocolate mousse, follow the same steps as dark chocolate mousse using milk chocolate.
  9. Repeat the same process with white chocolate for white chocolate mousse.
  10. Slice the cooled cake into two layers. Spread dark chocolate mousse on the first layer, add the second layer, and then spread milk chocolate mousse followed by white chocolate mousse.
  11. Refrigerate for at least 4 hours (or overnight) to let the mousses set.
  12. Before serving, garnish with chocolate shavings, berries, or whipped cream.

Notes
