Ingredients

  • 1/4 cup unsweetened cocoa powder
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup granulated sugar
  • 1/3 cup vegetable oil
  • 3 cups chocolate mousse
  • 1 cup mixed berries (strawberries, blueberries, raspberries)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a cake pan.
  2. In a bowl, mix together the flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, combine the sugar and vegetable oil, whisk together until well combined.
  4. Gradually add the dry ingredients into the wet ingredients, mixing until smooth.
  5. Pour the batter into the prepared pan and bake for about 25-30 minutes or until a toothpick comes out clean. Let it cool completely.
  6. Once cooled, layer the cake with chocolate mousse.
  7. Top with mixed berries.
  8. Chill before serving for best texture.

Notes

Serve with a dollop of whipped cream for enhanced flavor. Store leftovers in the refrigerator for up to 3 days.
