  • 1/2 cup buttermilk
  • 1/2 cup hot coffee (or hot water)
  • 1 cup heavy cream (for dark chocolate mousse)
  • 1/2 cup dark chocolate, chopped
  • 1 tbsp sugar (for dark chocolate mousse)
  • 1/2 tsp vanilla extract (for dark chocolate mousse)
  • 1 cup heavy cream (for milk chocolate mousse)
  • 1/2 cup milk chocolate, chopped
  • 1 tbsp sugar (for milk chocolate mousse)
  • 1/2 tsp vanilla extract (for milk chocolate mousse)
  • 1 cup heavy cream (for white chocolate mousse)
  • 1/2 cup white chocolate, chopped
  • 1 tbsp sugar (for white chocolate mousse)
  • 1/2 tsp vanilla extract (for white chocolate mousse)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch springform pan.
  2. In a bowl, whisk together the all-purpose flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Alternate adding the dry mixture and buttermilk to the butter mixture, mixing until well combined. Stir in the hot coffee until smooth.
  5. Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted comes out clean. Let cool completely.
  6. For each mousse layer, heat 1/2 cup of heavy cream until warm. Pour it over the chopped chocolate, then let it sit for 1 minute. Stir until smooth.
  7. Whip the remaining heavy cream for that layer with sugar and vanilla until soft peaks form. Gently fold it into the chocolate mixture. Repeat steps for dark, milk, and white chocolate mousses.
  8. Spread the dark chocolate mousse over the cooled cake base, followed by the milk chocolate mousse, and finally the white chocolate mousse. Smooth the top.
  9. Refrigerate for at least 4 hours or overnight.
  10. Remove from the springform pan, garnish with chocolate shavings, and slice to serve.

Notes

Chill the cake overnight for better flavor and texture. Use high-quality chocolate for richer flavors.
