Description

A rich and elegant dessert featuring three layers of chocolate mousse made from dark, milk, and white chocolate, perfect for any celebration.


Ingredients

  • 1 1/2 cups (190g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1/2 cup (45g) unsweetened cocoa powder
  • 1 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 large eggs
  • 1 cup (240ml) whole milk
  • 1/2 cup (120ml) vegetable oil
  • 2 tsp vanilla extract
  • 1 cup (240ml) boiling water
  • 8 oz (225g) dark chocolate (70% cocoa), chopped
  • 1 cup (240ml) heavy cream, chilled
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract
  • 8 oz (225g) milk chocolate, chopped
  • 8 oz (225g) white chocolate, chopped

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 9-inch springform pan with parchment paper.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, milk, oil, and vanilla extract. Mix until smooth.
  4. Gradually add boiling water to the batter; it will be thin.
  5. Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  6. Let the cake cool completely in the pan before removing it.
  7. For the Dark Chocolate Mousse, place chopped dark chocolate in a heatproof bowl. Heat 1/2 cup of heavy cream in a small saucepan until it simmers. Pour the hot cream over dark chocolate and let sit for 1-2 minutes, then stir until melted and smooth.
  8. Whip the remaining heavy cream with powdered sugar and vanilla extract until stiff peaks form, then fold into melted chocolate until smooth. Refrigerate until ready to assemble.
  9. Repeat the steps for the Milk and White Chocolate Mousse using respective chocolates.
  10. Assemble the cake by placing the cooled chocolate cake base on a serving platter. Spread dark chocolate mousse over the cake, followed by milk chocolate mousse, and then white chocolate mousse on top.
  11. Refrigerate the assembled cake for at least 4 hours to set.
  12. Remove the sides of the springform pan, slice, and enjoy!

Notes

Ensure all ingredients are at room temperature for best results. You can add fresh berries between layers for a fruity touch.
