A rich and creamy dessert that combines dark, milk, and white chocolate into a smooth, layered mousse, perfect for celebrations.

- 1 1/2 cups (190g) all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup (120g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup (240ml) buttermilk
- 1/2 cup (45g) unsweetened cocoa powder
- 1/2 cup (120ml) hot water
- 4 oz (115g) dark chocolate (70% cocoa), chopped
- 1 cup (240ml) heavy cream
- 1/4 cup (60g) granulated sugar
- 1 tsp vanilla extract
- 4 oz (115g) milk chocolate, chopped
- 1/4 cup (60g) granulated sugar
- 1 tsp vanilla extract
- 4 oz (115g) white chocolate, chopped
- 1/4 cup (60g) granulated sugar
- 1 tsp vanilla extract
- Chocolate shavings or curls (optional)
- Fresh berries (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and line an 8-inch round cake pan with parchment paper.
- In a medium bowl, mix together the flour, baking powder, baking soda, and salt.
- In another bowl, cream the softened butter and granulated sugar until light and fluffy. Beat in the eggs one by one, mixing well after each addition. Add the vanilla extract.
- Gradually mix in the dry ingredients, alternating with the buttermilk. Stir in the cocoa powder until smooth and add the hot water, mixing well.
- Pour the batter into the prepared pan and bake for 25-30 minutes. A toothpick should come out clean when inserted into the center. Allow the cake to cool completely.
- For the dark chocolate mousse, heat the cream and sugar in a saucepan until simmering. Pour it over the chopped dark chocolate, let it sit for a moment, then stir until smooth. Whip the mixture until it’s fluffy.
- Repeat the process for the milk chocolate and white chocolate mousses.
- Once the cake is cool, slice it in half. Layer the first half with dark mousse, place the second layer of cake on top, then add the milk chocolate mousse. Top it off with the white chocolate mousse.
- Refrigerate the cake for at least 4 hours to set. Before serving, decorate with chocolate shavings and fresh berries if desired.
Notes
Ensure all ingredients are at room temperature for better mixing. You can make the mousses a day ahead to save time.
