- 2 cups chocolate cookie crumbs
- 1/4 cup unsalted butter, melted
- 1 cup dark chocolate, melted
- 1 cup milk chocolate, melted
- 1 cup white chocolate, melted
- 3 cups heavy cream, divided
- 1/4 cup powdered sugar (for each mousse layer)
- 1/2 cup heavy cream (for ganache)
- 1/2 cup dark chocolate, chopped
Instructions
- Prepare the Crust: Combine chocolate cookie crumbs and melted butter, then press into the bottom of a springform pan. Refrigerate for about 30 minutes to set.
- Make the Chocolate Mousse Layers: Whip 1 cup of heavy cream with 1/4 cup powdered sugar for each mousse layer, folding in the respective melted chocolate. Pour each layer over the chilled crust in order: dark, milk, and then white. Refrigerate for 4-6 hours until set.
- Prepare the Ganache: Heat 1/2 cup heavy cream in a saucepan until simmering. Pour over chopped dark chocolate, let sit, then stir until smooth.
- Decorate and Serve: Pour ganache over the set cake, allowing it to drip down the edges. Garnish with fresh raspberries, chocolate swirls, and mint leaves. Slice and serve chilled.
Notes
Store leftovers in the refrigerator for up to 3-4 days. This cake does not freeze well.
